This delicious treat is deceptively tasty! It’s made with hidden veggies and it makes a great gift as it’s vegan and paleo friendly.
Maple Syrup/Rice Malt Syrup
Sweet Potato purée
Banana can be substituted
broken into small pieces (but not too fine)
of chopped Nuts
Seeds or Dried fruits of choice. I used Almonds, Macadamias and Pumpkin Seeds
Place the maple syrup, vanilla, sweet potato, cocoa and melted coconut oil into a food processor and process until smooth. Alternatively, a hand blender can be used.
Stir through the cookies and nuts or seeds.
Place the mixture in the fridge for 30 minutes to firm.
Take the chocolate mixture out of the fridge and, using wrap etc, roll it into a log shape (aka the salami). It will be approx. 4cm wide and 17cm in length.
Wrap the salami and place in the fridge for a minimum of 4 hours.
If desired, lightly dust the outside of the Chocolate Salami with coconut flour or arrowroot.
To serve, cut slices and devour.
The Chocolate Salami will need to be kept in the fridge as it will soften at room temperature.
Alternatively, this Chocolate Salami can be made in a baking tray and kept in the fridge or freezer.
