2 minute Bites

These tasty and healthy 2 minute bites are from Lizzy Williamsons new book '2 Minute Moves', where she shows you ways to look after yourself...2 minutes at a time!

    Brain Booster Balls

    • 1 Cup of Almonds or a combination of your favourite nuts
    • 1/2 Cup of Seeds e.g.Pepitas, Chia, Linseed or Sunflower
    • 1/8 Cup Goji Berries (not essential but delicious
    • 1/4 Cup shredded or desicatted Coconut
    • 2 Tablespoons Cacao Powder
    • 4 Medjool Dates pitted
    • 2 Tablespoons Coconut Oil

    Chocolate Bites

    • 2 Tablespoons Cacao Powder
    • 1 Tablespoon Coconut Oil melted
    • 1 teaspoon raw Honey Maple Syrup or Rice Malt Syrup can be substituted
    • 1/2 teaspoon of Cinnamon Powder
    • Then add whatever additional flavours your heart desires
    • 1/4 Cup chopped Nuts almonds, hazelnuts etc
    • 2 teaspoons Goji Berries
    • 1 drop Peppermint Oil
    • Orange or Lime Rind



      Brain Booster Balls

      • Place all the ingredients into a blender and process until well combined.
      • If the mixture is too thick and not blending well add a small amount of water or extra coconut oil.
      • Take tablespoon amounts of mixture and roll in a ball. Repeat until all the mixture is gone.
      • If desired, roll the balls in extra desicatted coconut or seeds.
      • Store in a sealed container in the fridge for 2 weeks or in the freezer for a few months.

      Chocolate Bites

      • In a bowl, stir the cacao powder, coconut oil, honey and cinnamon powder together until combined.
      • Add in any desired extras.
      • place some baking powder on a flat plate and pour the mixture onto it, using a spoon to spread it out.
      • Place the tray in the freezer until set.
      • Be sure to store the chocolate in the fridge or freezer, as it will melt if left out too long.
