These Chocolate Peanut Butter Cookies are yet another opportunity to trick your kids these school holidays (see this cake and this ice cream for other chances to create veggie espionage!). Made with sweet potato these delicious cookies will ensure that your kids are in therapy for many years to come with parental trust issues.

I have used Sweet Potato in these cookies recently (and another I’ll share with you soon) and love to use it in place of butter. It does tend to make the Chocolate Peanut Butter Cookies are more cakey than crispy but these ones do hold up well on the firm scale. These Chocolate Peanut Butter Cookies were inspired by these ones.

If you can’t use peanut butter then I’m sure these would taste amazing with Almond Butter as well. Let me know if you try it! You could also try mashed ripe Banana if you prefer to Sweet Potato or even Pumpkin, just make sure it’s not too watery.

Like most of my cookie recipes I have tried to make the Chocolate Peanut Butter Cookies as simple as possible to make. I like to use my blender as it churns all the ingredients together so there’s no evidence of any vegetable goodness; just don’t blend it until it turns into mush as the cookies won’t form a nice shape. If you do; don’t worry. Pop the dough in the fridge for 10 minutes to allow the coconut oil to harden a little to give the cookies a better shape.

Ingredients

Chocolate Peanut Butter Cookies

  • 1/3 Cup Coconut Oil
  • 1/3 Cup Maple Syrup/Rice Malt Syrup
  • 1/3 Cup Peanut Butter
  • 1/3 Cup Sweet Potato Puree to make puree place a whole unpeeled Sweet Potato in a moderate oven for 60-80 minutes, or until soft and gooey
  • 2 teaspoon Vanilla Extract
  • 1 Egg
  • 1/4 Cup Cococa
  • 1/2 Cup Arrowroot
  • 1/3 Cup Coconut Flour
  • 1/2 teaspoon Bicarb Soda Baking Soda
  • Dash of Salt

Instructions

Chocolate Peanut Butter Cookies

  • Preheat the oven to 180C/360Line and grease 2 baking trays.
  • Using blender or a hand held blender, place all the wet ingredients in a bowl and mix til combined.
  • Add the dry ingredients and blend on low until a nice dough forms. Scrape down the edges of the bowl at least once to make sure all the ingredients are incorporated.
  • Take heaped Tablespoon amounts of mixture and form into a ball. Place the ball on the tray and, using your palm or a spoon, flatten 2/3rd way down. The cookies will only spread a little bit. Repeat and use the other trays.
  • If desired, top with chopped nuts and chocolate chips prior to baking.
  • Bake the Peanut Butter Cookies for 13-15 minutes.
  • Allow to cool on the tray.
  • Cooled cookies can be kept in an airtight container but they will soften the longer they are left (so eat more!)
