Samoa Cookies

These Samoa Cookies are super sweet (well at least by my fructose free standards) which makes them the perfect treat to make for your “I’m not eating any of your weird Gluten thingy food” friends. You know who I’m talking about, we all have them. They might be your sugar addicted teenagers who refuse to try anything new, or your passive-aggressive work colleague who both undermines and belittles you with their snide ‘compliments’. We have all experienced the family member, a friend or even a random nosey stranger who likes to put their own opinions where they are not wanted. Next time they open their mouths, shove one of these delicious Samoa Cookies in it!

Being an Australian I am unfamiliar with the concept of Girl Scout Cookies, but this didn’t stop me wanting to eat them. The combination of caramel, coconut and chocolate is perfect for pretty much any type of dessert and these Samoa Cookies do not disappoint.

However they are a bit fiddley.

I will not lie to you; these cookies are easy but there are a few separate steps involved and you’ll probably end up wearing some chocolate and caramel sauce over your shoes. First of all you make the cookies (based on my super allergy friendly Healthy Tiny Teddies) using 2 circle cutters. I used a large egg ring and the larger end of my decorating tips (you know the ones you use to decorate a cupcake with). You can make your Samoa Cookies whatever size you like; they don’t even have to have a hole in them (imagine Dinosaur Samoa Cookies!!).

After the cookies comes the chocolate. Dip one side of the cookie in the chocolate and then place them in the fridge to set. This is especially important if using my chocolate recipe as it is made with coconut oil but this step should still be followed with other chocolates too. The cookies need to go in the fridge for 30 minutes, which is perfect as that is how long it takes to make the caramel sauce.

The Caramel Sauce is made by simmering coconut cream and maple syrup over a medium heat until it’s golden and thick (and so so tasty!). It’s pretty damn amazing stuff. I once made 1 litre of Caramel Sauce as a birthday present for a friend. Give it 5 minutes to cool off before keeping some for the ‘cookie glue’ and adding the coconut to the rest. The amount of coconut you add will depend on how much sauce was made. My Caramel Sauce usually yields about ¾ Cup, but this can vary depending on the coconut cream/milk that you use. Some cans are more watery than others which will result in a less sauce (sad face).

Girl Scout or not, these Samoa Cookies are worth knocking on doors for. They are Gluten and Dairy Free, as well as being refined Sugar Free, Egg and Nut Free and they are even Vegan friendly too. They are part of my super allergy friendly range of recipes.

INGREDIENTS
Samoa Cookies
  1. Biscuits
  2. 1 serve Caramel
  3. 1 1/2 - 2 Cups Desicatted Coconut
  4. 100 grams Melted Chocolate
Biscuit
  1. 1/2 Cup Coconut Oil, slightly softned (not melted)
  2. 1/2 Cup Maple Syrup (Rice Malt Syrup or Honey can be substituted)
  3. 4 teaspoons Vanilla Extract
  4. 1 Cup plus 2 Tablespoons Arrowroot/Tapioca Flour
  5. 2/3 Cup plus 2 teaspoons Coconut Flour
  6. 1/2 teaspoon Bicarb Soda
  7. 1/4 teaspoon Salt
Caramel
  1. 1 1/2 Cups of canned Coconut Cream
  2. 1/2 Cup Maple Syrup
  3. dash of Salt
  4. 2 teaspoons Vanilla Extract
Chocolate
  1. 1/4 Cup Coconut Oil
  2. 1 Tablespoon Maple Syrup
  3. 1/4 Cup Cocoa
  4. 1 teaspoon of Vanilla Extract
INSTRUCTIONS
Samoa Cookies
  1. Take the cooled cookies and place on a lined baking tray. Place the melted chocolate in a shallow bowl.
  2. Dip/place the cookies in the chocolate to completely cover one side of the cookie. Place the cookies, chocolate side up, on the baking tray. Repeat with the remaining cookies and place the tray in the fridge for 30 minutes to allow the chocolate to set. Keep the remaining chocolate to decorate the cookies.
  3. Place the caramel in a bowl (if it has been in the fridge or resting it may need to be gently warmed to make it spreadable). Keep 1/3 Cup of caramel seperate.
  4. Add the coconut to the remaining caramel sauce and stir until combined and sticky. Add more/less coconut depending on the amount of caramel sauce you have (NB; this caramel recipe usually yields 3/4 cup of sauce but they can vary depending on the quality of coconut cream used).
  5. Using the remainder of the caramel sauce, spread the sauce evenly over plain side of the cookie (ie not the chocolate side). Take spoonfuls of the caramel coconut and spread it evenly over the caramel ontop of the cookie. It helps to pack it down firmly with your hands.
  6. Drizzle the remaining chocolate over the Samoa Cookies and then place the cookies in the fridge for 30 minutes to set.
  7. These Samoa Cookies must be stored in the fridge and are a super sweet treat!
Biscuit
  1. Put all the ingredients into a blender/mixer and process until combined. Scrape the edges down to ensure that all the ingredients are incorporated.
  2. Alternatively use a bowl, a mixing spoon and some arm strength and mix until combined.
  3. Wrap the dough in plastic and leave at room temperature for 30 minutes to firm.
  4. Pre heat the oven to 180C/360F. Line and grease 2 baking trays.
  5. Roll the dough between 2 sheets of lightly greased baking paper. The dough should be 4-6mm in height; not too thin that it's see through and not too thick.
  6. Using a large glass or an egg ring, cut out as many circles as possible from the dough. Transfer them to the prepared tray, and then cut out the centre of the circle using a shot glass, a frosting tip etc. (NB It's much easier to transfer a circle than a ring to a baking tray)
  7. Take the left over dough, reroll and cut out more circles. Repeat until all the dough has been used.
  8. Place the tray in the oven and bake for 8-10 minutes. Before removing from the oven check that the bottom of the cookie has firmed and they have turned a golden brown colour. The cookies will firm up upon cooling.
Caramel
  1. Place the coconut cream, maple syrup and salt in a saucepan over medium/high heat. Bring the mixture to boil, then reduce to a medium heat.
  2. Allow the mixture to simmer until quite thick and dark golden in colour. Stir regularly to prevent burning. This will take 15-30 minutes, depending on the quality of your coconut cream.
  3. Add vanilla and continue to cook on medium heat for another 5 minutes.
  4. The caramel will be dark golden in colour and delicious. When cooler, place into container and keep in fridge. The caramel will thicken as it refridgerates.
Chocolate
  1. Over a very low heat, melt the Coconut oil in a saucepan. Add the maple syrup and stir
  2. Add the cocoa and whisk to combine.
  3. Allow to thicken slightly, but DO NOT boil or over heat (as this causes the coconut oil to separate).
  4. Use immediately on the cookies or pour into a lined tray and freeze until set (approximately 30 minutes). Store in the freezer.
